Grape: Kimoto Junmai
Notes: Made using the traditional and labor intensive Kimoto method, an ancient style for creating the yeast starter mash that takes about four weeks to complete (about twice as much time and effort than the modern method). The sake is then aged for 4 years in bottle before release producing complex flavors and stunning smoothness. A menage of mushroom, soy, nuts, chamomile, crushed wild flowers... enjoy warm or with a slight chill.
